Cooking Lessons at Dar Roumana

Moroccan cuisine is considered by many to be one of the most subtle and sophisticated cuisines of the world.  Over the centuries, Moroccan cookery has incorporated the the flavours and techniques of the indigenous Berbers, the Moors of Southern Spain, and the Arabs coming from as far afield as Persia and the Levant.  A wide variety of spices and herbs such as ginger, turmeric, cinnamon, coriander and flat-leaf parsley are commonly used in every-day dishes like tagines, b'stilla, and a variety of cooked and raw salads.

We offer Moroccan cooking lessons exclusively for our guests.  Each lesson is tailor-made to suit the tastes and levels of the participants.  As such, there are no set dates or durations.  You may simply indicate your desire to participate in a cooking lesson when you make your reservation.  We usually suggest that guests spend a day or two in Fes/ Morocco so that they are acquainted with the cuisine and thus have a better feeling for the kind of dishes they would like to prepare.

In general, most guests choose to do one-day sessions with us.  These commence after breakfast and include a trip to the souq to purchase the ingredients, the instruction (hands-on, not just demonstrations), and then we serve you the dishes we have prepared.  We will also provide you with a booklet of our recipes so that you can recreate the dishes at home. Unlike some Oriental cuisines, Moroccan dishes can be easily prepared using ingredients found in most good supermarkets in Europe and the United States. 

Lessons are offered on Tuesdays and Fridays.  Instruction is provided in English in the kitchen of Dar Roumana.  The price for a lesson is 500 dirhams for one person, 800 for a couple,  which includes the trip to the souq, all ingredients, instruction, recipe booklet, and dinner of the dishes prepared.  For further information, please contact Jennifer or Stephanie at: info@darroumana.com.
